Sweet Potato Chipotle Chili Recipe

Chipotle chilies are dried, smoked jalapeno chilies.



1 cup each: chopped onion, green bell pepper

2 teaspoons minced gingerroot

1 teaspoon each: minced garlic, crushed cumin seeds

1 tablespoon peanut or canola oil

3 cups cubed, peeled sweet potatoes

2 cans black beans, rinsed, drained

1 can chili-style chunky tomatoes, undrained

1/2-1 chipotle chili in adobo sauce, chopped

1 cup water or vegetable broth

Salt, to taste


Saute onion, bell pepper, gingerroot, garlic and cumin seeds in oil in large saucepan until tender, about 5 minutes. Add remaining ingredients, except salt, and heat to boiling. Reduce heat and simmer, covered, until sweet potatoes are tender, about 15 minutes. Season to taste with salt.
