Fettuccine with Greens and Caramelized Onions Recipe

4 servings



4 medium onions, sliced

1 tablespoon olive oil

1 teaspoon sugar

1 can reduced-sodium vegetable broth

4 cups thinly sliced kale, mustard greens, Swiss chard or spinach

Salt and pepper, to taste

8 ounces fettuccine, cooked, warm


Cook onions in oil over medium heat in large skillet 5 minutes, reduced heat to low and stir in sugar. Cook until onions are golden in color and very soft, about 20 minutes. Stir in broth, heat to boiling. Reduce heat and simmer, uncovered, until broth is reduced by 1/3, about 10 minutes. Add kale and simmer, covered, until wilted, 5 to 7 minutes. Simmer, uncovered, until broth is almost evaporated, about 5 minutes. Season to taste with salt and pepper. Toss with pasta.
