Ripe Tomato and Leek Soup Recipe

6 servings



2 cups sliced leeks

3 cloves garlic, minced

1 tablespoon olive oil

6 large tomatoes

4 cups reduced-sodium fat-free chicken broth

1/2-1 teaspoon dried basil leaves

Salt and white pepper, to taste

6 tablespoons fat-free sour cream or plain yogurt

Basil sprigs, as garnish


Sauté leeks and garlic in oil in large saucepan until tender, about 8 minutes. Add tomatoes, broth and basil to saucepan, heat to boiling. Reduce heat and simmer, covered, 10 minutes. Process soup in food processor or blender until smooth, season to taste with salt and white pepper. Serve soup warm or chilled, top each bowl of soup with a tablespoon of sour cream and garnish with basil sprigs.
