Potato Chowder Recipe

6 servings



1 cup chopped onion

1/4 cup thinly sliced celery

2 tablespoons margarine or butter

3 tablespoons flour

2 cups reduced-sodium chicken broth

3 1/2 cups peeled, cubed Idaho potatoes

1/4-1/2 teaspoon celery seeds

2 cups fat-free milk

Salt and pepper, to taste


Sauté onion and celery in margarine in large saucepan until tender, 5 to 8 minutes, stir in flour and cook 1 minute longer. Add broth, potatoes, and celery seeds to saucepan, heat to boiling. Reduce heat and simmer, covered, until potatoes are tender, 10 to 15 minutes. Stir in milk and cook until hot, 2 to 3 minutes. Season to taste with salt and pepper.
