French Onion Soup Recipe

6 cups thinly sliced Spanish onions

2 cloves garlic, minced

1 teaspoon sugar

6 cups reduced-sodium fat-free beef broth

2 bay leaves

Salt and white pepper, to taste

8 Bruschetta

8 tablespoons shredded fat-free Swiss or mozzarella cheese


Add onions and garlic to lightly greased Dutch oven and cook, covered, over medium low heat until wilted, 8 to 10 minutes. Stir in sugar and continue cooking, uncovered, until onions are lightly browned, about 10 minutes. Stir in broth and bay leaves, heat to boiling. Reduce heat and simmer, covered, 30 minutes. Discard bay leaves, season to taste with salt and white pepper.


Top each Bruschetta with 1 tablespoon cheese, broil 6 inches from heat source until cheese is melted. Top each bowl of soup with a Bruschetta.
