Cream of Broccoli Soup Recipe



1 cup chopped onion

3 cloves garlic, minced

2 pounds broccoli, cut into 2-inch pieces

1/2 teaspoon dried thyme leaves

1/8 teaspoon ground nutmeg

3 1/2 cups reduced-sodium fat-free chicken broth

1/2 cup fat-free half-and-half or fat-free milk

Salt and white pepper, to taste

6 tablespoons fat-free sour cream

1 1/2 cups Croutons


Saute onion and garlic in lightly greased saucepan until tender, 3 to 5 minutes. Stir in broccoli, thyme, and nutmeg, cook 2 minutes longer. Add broth to saucepan and heat to boiling; reduce heat and simmer, covered, until broccoli is tender, about 10 minutes. Stir in half and half.


Process soup in food processor or blender until smooth, season to taste with salt and white pepper. Stir 1 tablespoon sour cream into each bowl of soup, sprinkle with Croutons.
