Zucchini Fans Provencal Recipe

4 servings



2 medium sweet onions, thinly sliced

6 cloves garlic, minced

4 small zucchini, halved lengthwise

3 medium tomatoes, thinly sliced

1/2 cup dry white wine or reduced-sodium vegetable broth

Salt and pepper, to taste

1 1/2 teaspoons dried Italian seasoning


Separate onions into rings, arrange half the onions and garlic in bottom of 11 x 7-inch baking pan. Cut zucchini halves lengthwise into scant 1/4-inch sliced, cutting to, but not through, small ends. Alternate zucchini and tomato slices in rows over onions, spreading zucchini slices into "fans". Arrange remaining onions and garlic on top, pour wine over. Sprinkle lightly with salt, pepper and Italian seasoning. Bake, covered, at 350 degrees until zucchini is tender, about 25 minutes.
