Oriental Green Beans Recipe

1/4 cup each: chopped onion, red bell pepper

2 teaspoons each: finely chopped gingerroot, garlic

2 cups halved green beans

1 cup rinsed, drained canned adzuki or black beans

1/2 cup sliced water chestnuts

1 tablespoon rice wine vinegar

1-2 teaspoons reduced-sodium tamari soy sauce

Salt and pepper, to taste


Stir-fry onion, bell pepper, gingerroot, and garlic in lightly greased wok or large skillet 2 minutes, add green beans and stir-fry until beans are crisp-tender, 5 to 8 minutes. Add adzuki beans, water chestnuts, vinegar, and soy sauce, stir-fry until hot, about 2 minutes. Season to taste with salt and pepper.
