A New England Baked Beans Recipe8-10 servings
Ingredients: 8 ounces dried navy or Great Northern beans 4 slices diced bacon, fried crisp, drained 3/4 cup chopped onion 1 clove garlic 3 tablespoons each: tomato paste, dark molasses, packed light brown sugar 1/2 teaspoon dry mustard, salt 1/4 teaspoon dried thyme leaves |
Method: Cover beans with 2 inches of water in large saucepan, heat to boiling and boil, uncovered, 2 minutes. Remove from heat and let stand, covered, 1 hour.
Add more water to beans to cover, if necessary. Heat to boiling, reduce heat and simmer, covered, until beans are tender, about 1 1/4 hours. Drain, reserve liquid. Mix beans and remaining ingredients in 1 1/2 quart casserole, adding enough reserved cooking liquid to cover beans. Bake, covered, at 325 degrees, stirring occasionally, 3 hours. Bake, uncovered, until beans are desired consistency, 30 to 60 minutes. |
