Honey Glaze Roasted Beets Recipe6 servings
Ingredients: 1 1/2 pounds medium beets Vegetable cooking spray 2 medium red onions, cut into wedges 1/4 cup currants or raisins 3-4 tablespoons toasted walnuts 1/4 cup honey 2-3 tablespoons red wine vinegar 1 tablespoon canola oil 4 cloves garlic, minced Salt and pepper, to taste |
Method: Arrange beets and onions in single layer on greased foil-lined jelly roll pan, spray with cooking spray. Roast at 425 degrees until beets are tender, about 40 minutes. Peel beets and cut into 1-inch pieces. Combine beets, onions, currants, and walnuts, heat combined remaining ingredients, except salt and pepper, pour over vegetables and toss. Season to taste with salt and pepper. |
