Crispy French Fries Recipe

4-6 servings



1 pound Idaho potatoes, unpeeled

2 teaspoons salt

Vegetable cooking spray

Salt and pepper, to taste


Cut potatoes into sticks 3 to 4 inches long and a scant 1/2 inch wide. Sprinkle lightly with 2 teaspoons salt and let stand 10 minutes. Rinse in cold water and dry on paper toweling. Arrange potatoes in single layer on greased foil-lined jelly roll pan, spray with cooking spray, tossing to coat all sides. Sprinkle lightly with salt and pepper. Bake at 350 degrees until golden brown and crisp, 40 to 45 minutes, turning halfway through cooking time.
