Creamed Spinach Recipe

Creamed Spinach Recipe

4 servings



1/4 cup finely chopped onion

2 teaspoons margarine or butter

2 tablespoons flour

1 cup fat-free milk or fat-free half and half

2 packages fresh spinach, cooked, drained

1/4 cup fat-free sour cream

Ground nutmeg, to taste

Salt and pepper, to taste


Saute onion in margarine in small saucepan until tender, 3 to 5 minutes. Stir i flour, cook 1 minute. Whisk in milk and heat to boiling, boil, whisking until thickened, about 1 minute. Reduce heat to medium, stir in spinach and sour cream. Cook until hot, 2 to 3 minutes, season to taste with nutmeg, salt and pepper.
