Beets Dijon Recipe

4 servings



1/2 cup finely chopped onion

2 cloves garlic, minced

1/3 cup fat-free sour cream

2 tablespoons Dijon mustard

2-3 teaspoons lemon juice

Salt and white pepper, to taste

1 1/2 pounds medium beets, cooked, cubed or sliced, warm


Sauté onion and garlic in lightly greased small saucepan until tender, 3 to 4 minutes. Stir in sour cream, mustard, and lemon juice, heat over low heat until hot, 2 to 3 minutes. Season to taste with salt and pepper, spoon over beets.
