Baked Sweet Potatoes with Pineapple Recipe

1 can pineapple tidbits, undrained

4 medium sweet potatoes, peeled, quartered, cooked

1 teaspoon low-fat margarine or butter

1/4 teaspoon each: ground cinnamon, allspice


Drain pineapple tidbits, reserve 1/2 cup juice. Mash sweet potatoes with potato masher or electric mixer, adding margarine, and enough pineapple juice for desired consistency. Mix in pineapple and spices, spoon into lightly greased 1-quart baking dish. Bake, uncovered, at 350 degrees until lightly browned, about 30 minutes.
