Falafel Burgers with Tahini Dressing Recipe

4 servings



1 1/2 cups cooked dried or drained, canned garbanzo beans, coarsely pureed

1/4 cup finely chopped parsley

2 tablespoons chopped onion

2 cloves garlic, minced

1-2 tablespoons lemon juice

1/4 cup all-purpose flour

1 1/4 teaspoons ground cumin

Salt and pepper, to taste

2 pita breads, halved


Tahini Dressing:

1/3 cup fat-free yogurt

2-3 tablespoons tahini

1 small clove garlic, minced

1/2-1 teaspoon lemon juice


Mix garbanzo beans, parsley, onion, garlic, lemon juice, flour, and cumin in bowl, season to taste with salt and pepper.


Shape mixture into 4 burgers and cook in lightly greased skillet until browned, 3 to 4 minutes on each side. Arrange burgers in pitas, drizzle 2 tablespoons Tahini Dressing over each burger. Spoon combined tomato, cucumber, and sliced green onions into pitas.


Tahini Dressing:

Mix all ingredients, refrigerate until ready to use.
