Veracruz Sauce Recipe

Makes 2 cups



1 cup chopped onion

3 cloves garlic, minced

1 pickled jalapeno chili, minced

2-inch piece cinnamon stick

1 bay leaf

1/2 teaspoon each: dried oregano and thyme leaves, ground cumin

3 cups chopped tomatoes

1/4 cup sliced pitted green olives

1-2 tablespoons capers

Salt and pepper, to taste


Saute onion, garlic, jalapeno chili, cinnamon, and herbs in large lightly greased skillet until onion is tender, 5 to 8 minutes. Add tomatoes, olives, and capers, simmer, uncovered, until sauce is a medium consistency, about 10 minutes. Discard bay leaf, season to taste with salt and pepper.
