Fresh Tomato and Herb Sauce Recipe

Makes 4 cups



5 cups chopped tomatoes

1/2 cup each, chopped onion, dry red wine or water

2 tablespoons each: tomato paste, minced garlic, finely chopped fresh

or 1 1/2 teaspoons dried thyme leaves

1 tablespoon sugar

2 bay leaves

1/8 teaspoon each: crushed red pepper, ground black pepper

1/2 teaspoon salt

3-4 tablespoons finely chopped fresh or 2 teaspoons dried basil leaves


Combine all ingredients except basil, in large saucepan, heat to boiling. Reduce heat and simmer, covered, 5 minutes. Simmer, uncovered, until sauce is reduced to medium consistency, about 30 minutes, adding basil during last 5 minutes. Discard bay leaves.
