Wheat Berry and Garden Tomato Salad Recipe

4 servings



3 cups cooked wheat berries

4 cups coarsely chopped ripe tomatoes

1 1/2 cups cubed, seeded cucumber

1/3 cup each: sliced green onions, chopped parsley

1/2 cup crumbled reduced-fat feta cheese

Salt and pepper, to taste


Roasted Garlic Vinaigrette :

2-4 tablespoons olive oil

1/4 cup balsamic vinegar

2 teaspoons minced roasted garlic

1 teaspoon each: dried mint and oregano leaves


Combine all ingredients, except salt and pepper, and toss, season to taste with salt and pepper.
