Sante Fe Baked Beans Recipe

4 servings



1 cup chopped onion

1/2 cup chopped poblano chili or green bell pepper

1/2 -1 serrano or jalapeno chili, finely chopped

1 tablespoon olive oil

2 cans pinto beans, rinsed, drained

2 cups whole kernel corn

6 sun-dried tomatoes, softened, sliced

2-3 tablespoons honey

1/2 teaspoon each: ground cumin, dried thyme leaves

3 bay leaves

Salt and pepper, to taste

1/2 cup crumbled Mexican white or farmer's cheese

1/4 cup finely chopped cilantro


Saute onion and chilies in oil in small skillet until tender, about 5 minutes. Combine with remaining ingredients, except salt, pepper, cheese and cilantro, in 1 1/2-quart casserole, season to taste with salt and pepper. Bake, covered, at 350 degrees until hot, about 30 minutes, sprinkle with cheese and bake, uncovered, until cheese is melted, about 15 minutes. Discard bay leaves. Sprinkle with cilantro.
