Kasha with Green Veggies Recipe

Kasha with Green Veggies Recipe

6 servings



1 1/2 cups kasha

1 egg, beaten

1 large green bell pepper, chopped

1/2 cup sliced green onions

2 cloves garlic, minced

1 tablespoon olive oil

4 cups reduced-sodium vegetable broth

1/2 teaspoon each: dried marjoram and thyme leaves

8 ounces broccoli rabe, cut into 1-inch pieces

1/2 cup frozen baby lima beans

Salt and pepper, to taste


Mix kasha and egg in bowl, cook over medium heat in large lightly greased large skillet until kasha is dry and grains are separated, about 5 minutes.


Saute bell pepper, green onions, and garlic in oil in large saucepan until tender, about 5 minutes. Add kasha, broth, and herbs, heat to boiling. Reduce heat and simmer, covered, 20 minutes, add broccoli rabe and lime beans and simmer until kasha and broccoli rabe are tender and liquid absorbed, about 10 minutes. Season to taste with salt and pepper.
