Just Peachy Bean Pot Recipe

6 servings



1 cup chopped onion

1 clove garlic, minced

1 - 1 1/2 teaspoon curry powder

1/2 teaspoon each: ground allspice, crushed red pepper

1 tablespoon margarine or butter

2 cans red kidney beans, rinsed, drained

1 can navy beans, rinsed, drained

1 1/2 cups diced peaches

1/2 cup each: coarsely chopped mixed dried fruit, mango chutney, peach nectar

2 tablespoons cider vinegar

Salt and pepper, to taste


Saute onion, garlic, herbs, and red pepper in margarine in small skillet until tender, about 5 minutes. Mix with remaining ingredients, except salt and pepper, in 2 1/2-quart casserole, season to taste with salt and pepper. Bake, covered, , at 350 degrees 30 minutes, bake, uncovered, if thicker consistency is desired, about 15 minutes.
