Asian Pilaf Recipe

Asian Pilaf Recipe

4 servings



1/3 cup each: chopped onion, celery

2-3 teaspoons finely chopped gingerroot, garlic

1 tablespoon Asian sesame oil

1/2 cup each: brown rice, millet

2 1/2 cups reduced-sodium vegetable broth

1 1/2 cups halved snow peas

1/2 can water chestnuts, drained, sliced

1/2 cup thinly sliced green onions

2-3 tablespoons reduced-sodium tamari soy sauce

Salt and pepper, to taste


Saute onion, celery, gingerroot, and garlic in sesame oil in large saucepan until onion is tender, about 10 minutes. Add rice and millet and cook 2 minutes longer, add broth and heat to boiling. Reduce heat and simmer, covered, 15 minutes. Stir in snow peas, water chestnuts, and green onions, simmer, covered, until grains and snow peas are tender and broth absorbed, about 10 minutes. Season to taste with soy sauce, salt and pepper.
