Smoked Chicken Breast and Linguine Salad Recipe

4 servings



1 pound boneless, skinless chicken breast

8 ounces linguine, cooked, room temperature

2 cups sliced carrots, cooked crisp-tender

1/2 can quartered artichoke hearts, drained, rinsed

12 cherry tomatoes, halved

1/4 cup sliced green onions

Sour Cream Dressing


Smoke chicken in smoker or on grill, using manufacturer's directions. Cool; refrigerate several hours or overnight to allow flavor to mellow. Shred chicken, or cut into pieces, combine with remaining ingredients and toss.
