Glazed Cornish Hens with Wild Rice Recipe

Cornish hens are marmalade-glazed and served with a fruited wild rice mixture for company fare.



2 Rock Cornish game hens 1 to 1 1/4 pounds each)

Vegetable cooking spray


1/2 cup no-sugar-added orange marmalade, warm

1/4 cup each: sliced green onions, celery

1 package (6.25 ounces) quick-cooking long-grain white and wild rice, spice packet discarded)

1 can (14 1/2 ounces) reduced-sodium chicken broth

1 can unsweetened Mandarin orange segments, drained

2 tablespoons each: raisins, finely chopped mint or parsley, toasted pecan halves

Salt and pepper, to taste


Cut Cornish hens into halves with poultry shears and place, cut sides down, on rack in roasting pan. Spray with cooking spray and sprinkle with paprika. Roast at 350 degrees with drumstick meat feels soft when pressed and juices run clear, 1 to 1 1/4 hours; baste with marmalade during last 30 minutes of roasting time.

Saute green onions and celery in lightly greased medium sauce pan until tender, about 5 minutes. Add remaining ingredients, except salt and pepper, and simmer, covered, until rice is tender, about 5 minutes. Season to taste with salt and pepper. Serve with Cornish hens.
