Chicken and Rice Roll Ups Recipe

4 servings



4 boneless, skinless chicken breast halves

3 cups cooked rice

1 cup each: whole kernel corn, finely chopped green bell peppers

1/4 cup diced pimientos

1/2 cup shredded Monterey Jack cheese

Paprika, salt and pepper, to taste


Pound chicken breasts with flat side of meat mallet to about 1/4 inch thickness. Combine rice, corn, bell peppers, pimientos, and cheese medium bowl. Spoon about 1/3 cup rice mixture on each breast, roll up and secure with toothpicks. Spoon remaining rice mixture in greased 11 x 7-inch baking dish; place chicken, seam sides down, on rice. Sprinkle lightly with paprika, salt, and pepper. Bake, covered, at 325 degrees 30 minutes, uncover and bake until cooked, 15 to 20 minutes.
