Chicken with Ravioli and Asparagus Recipe

4 servings



1 boneless, skinless chicken breast halves

Salt and pepper, to taste

2 cups reduced-sodium fat-free chicken broth

1 cup orange juice

1/2 cup dry white wine

1/4 teaspoon crushed red pepper

1 pound asparagus, sliced

2 tablespoons margarine or butter

1 package fresh mushroom ravioli, cooked, warm


Cook chicken over medium heat in lightly greased large skillet until cooked, about 10 minutes on each side. Sprinkle lightly with salt and pepper, remove from skillet. Add broth, orange juice, white wine and crushed red pepper and heat to boiling, boil, uncovered, with liquid is reduced to 1/2 cup, about 10 minutes. Add asparagus, simmer, covered, until crisp-tender, 3 to 4 minutes. Add chicken, margarine, and ravioli, cook until hot, 2 to 3 minutes. Season to taste with salt and pepper.
