Chicken Pasta Skillet Recipe

4 servings



1/2 cup each: chopped onion, green bell pepper

1 tablespoon olive oil

1 pound boneless, skinless chicken breast, cubed

1 large zucchini, cubed

1 can Italian-seasoned diced tomatoes, undrained

1 teaspoon dried marjoram leaves

3 tablespoons each: chopped sun-dried tomatoes, pitted black or Greek olives

Salt and pepper, to taste

4 ounces rigatoni, cooked, warm


Saute onion and bell pepper in olive oil in large skillet until tender, about 5 minutes, add chicken and saute 5 minutes. Stir in zucchini, tomatoes with liquid, marjoram, sun-dried tomatoes, and olives, heat to boiling. Reduce heat and simmer, uncovered, until chicken is cooked and saute is thickened, about 10 minutes, season to taste with salt and pepper. Serve over pasta.
