Chicken Flautas with Tomatillo Sauce Recipe

4 servings



1 cup chopped tomato

1/4 cup each: chopped onion, poblano chili

1/2 teaspoon each: ground cumin, dried thyme leaves

1 pound boneless, skinless chicken breast, cooked, shredded

1/4 cup chopped cilantro

Salt and pepper, to taste

8 flour or corn tortillas, warm

Vegetable cooking spray

1 cup Tomatillo Sauce

4 tablespoons crumbled Mexican white or feta cheese

1/4 cup fat-free sour cream


Saute tomato, onion, poblano chili, cumin, and thyme in lightly greased large skillet until onion is tender, about 5 minutes. Add chicken and cilantro, cook 2 to 3 minutes. Season to taste with salt and pepper. Spoon about 1/3 cup mixture on each tortilla, roll up and secure with toothpicks. Spray flautas lightly with cooking spray, cook over medium heat in large skillet until browned on all sides, 5 to 8 minutes. Serve with Tomatillo sauce, cheese, and sour cream.
