Chicken Enchiladas Mole Recipe

4 servings



8 corn or flour tortillas

1 cup mild or medium salsa

1 pound boneless, skinless chicken breast, cooked, shredded

1/2 cup each: shredded fat-free Cheddar cheese, sliced green onions

4-8 tablespoons fat-free sour cream

1/4 cup chopped cilantro

Mole Sauce


Dip tortillas in salsa to coat lightly. Spoon chicken along centers of tortillas, top with cheese, green onions, sour cream, and cilantro. Roll up and place, seam sides down, in baking pan, spoon Mole Sauce over. Bake, loosely covered, at 350 degrees until enchiladas are hot, 20 to 30 minutes.
