Noodles Florentine Recipe

Noodles Florentine Recipe

4 servings



3/4 cup each: finely chopped red onion, red bell pepper

2 cloves garlic, minced

1 package frozen chopped spinach, thawed, drained

2 cups cooked spinach noodles

3 eggs, lightly beaten

1 cup fresh whole wheat bread crumbs

2 teaspoons sugar

1/2 teaspoon each: ground nutmeg, salt, pepper

1/2 cup shredded reduced-fat Swiss cheese


Saute onion, bell pepper, and garlic in lightly greased medium skillet until tender, about 4 minutes, stir in spinach and remove from heat. Mix in remaining ingredients, except cheese, and spoon into greased 11 x 7-inch baking dish. Bake, uncovered, at 325 degrees 30 minutes. Sprinkle with cheese, bake until sharp knife inserted near center comes out clean, about 10 minutes. Cool on wire rack 5 minutes.
