This light tomato sauce is rich with succulent clams



1 tablespoon each: minced garlic, olive oil

1 can Italian tomatoes, undrained, coarsely chopped

1/4 cup dry red wine, clam juice or water

2 teaspoons dried oregano leaves

1 tablespoon lemon juice

1/8-1/4 teaspoon cayenne pepper

1/4 teaspoon black pepper

1 pound shucked baby clams

8 ounces linguine, cooked, warm


Sauté garlic in oil in medium saucepan until tender, about 2 minutes. Stir in remaining ingredients, except clams and linguine, heat to boiling., Reduce heat and simmer, uncovered, until mixture is medium sauce consistency, about 10 minutes., Stir in clams, simmer, unopened clams. Serve over linguine.
