Creamy Tomato-Pepper Sauce with Penne Recipe

6 servings



1 medium onion, chopped

1/2 teaspoon minced garlic

1 tablespoon olive oil

2 tablespoons dry sherry or water

1 can Italian-seasoned tomato sauce

1/3 cup chopped roasted red peppers

2 teaspoons sugar

1/4 cup reduced-fat sour cream

Salt and pepper, to taste

12 ounces penne, cooked, warm


Sauté onion and garlic in oil in large saucepan until softened, about 5 minutes. Stir in sherry, tomato sauce, roasted peppers, and sugar. Heat to boiling, reduce heat and simmer until slightly thickened, 10 to 15 minutes. Stir in sour cream, season to taste with salt and pepper. Serve over penne.
