Bow Tie Black Bean Pasta Recipe

4 servings



4 ounces dried black beans

1/2 cup each: chopped onion, red bell pepper

1/2 tablespoon minced garlic

1 1/2 teaspoons canola oil

1/4 cup dry sherry or vegetable broth

2 teaspoons dried Italian seasoning

2 cups vegetable broth

8 ounces tiny bow tie pasta, cooked

Salt and pepper, to taste


Cover beans with 2 inches water in large saucepan, heat to boiling and boil, uncovered, 2 minutes. Remove from heat and let stand, covered, 1 hour, drain.


Sauté onion, bell pepper, and garlic in oil in large skillet until onion is tender. Add sherry and simmer until liquid is absorbed. Add broth, black beans, and Italian seasoning, heat to boiling. Simmer until beans are tender, about 1 hour. Stir in pasta, simmer until hot, 3 to 4 minutes. Season to taste with salt and pepper.
