Pork Tenderloin with Gremolata Recipe

Pork Tenderloin with Gremolata Recipe

4 servings



1 pound pork tenderloin, fat trimmed, cubed

1 teaspoon olive oil

4 shallots, thinly sliced

1 cup reduced-sodium fat-free beef broth

2 medium potatoes, cubed

1 can diced tomatoes, undrained

Salt and pepper, to taste



1 cup packed parsley sprigs

1-2 tablespoons grated lemon zest

4 large cloves garlic, minced


Saute pork in oil in large saucepan until lightly browned, add shallots and saute 3 to 4 minutes. Stir in broth and heat to boiling, reduced heat and simmer, covered, 10 minutes. Add potatoes and tomatoes with liquid, simmer, covered, until potatoes are tender, about 15 minutes. Season to taste with salt and pepper. Pass Gremolata to stir into stew.



Process all ingredients in food processor until finely minced. Refrigerate until ready to use.
