Pastitsio Recipe

Pastitsio Recipe

1 pound lean ground lamb or beef

1 cup chopped onion

1 can reduced-sodium tomato paste

1/3 cup water

Salt and pepper, to taste

2 cups elbow macaroni, cooked

1/3 cup grated fat-free Parmesan cheese

1/4 teaspoon each: ground cinnamon and nutmeg

2 1/2 cups fat-free milk

2 tablespoons margarine or butter

1 egg

1/2 cup no-cholesterol real egg product or 4 egg whites.


Cook lamb and onion in lightly greased large skillet over medium heat until lamb is browned, about 5 minutes. Stir in tomato paste and water, cook 2 to 3 minutes longer. Season to taste with salt and  pepper. Spoon 1/2 of the macaroni into greased 13 x 9-inch baking pan, spoon meat mixture over macaroni. Sprinkle combined cheese and spices over lamb, spoon remaining macaroni over the top.


Heat milk and margarine or butter in medium saucepan, stirring until margarine is melted. Beat eggs and egg product in small bowl until blended, whisk milk into egg mixture. Pour over macaroni. Bake, uncovered, at 350 degrees until casserole is bubbly, 50 to 60 minutes.
