Paprika Sirloin Stew with Sour Cream Recipe

4 servings



1 cup reduced-sodium fat-free beef broth

2 cups Italian flat green beans

3/4 pound red potatoes, cubed

2 bay leaves

1 pound boneless beef sirloin steak, fat trimmed, cut into very thin strips

1 cup pearl onions, peeled

1 can diced tomatoes, undrained

1 tablespoon paprika

1/2 cup fat-free sour cream

Salt and pepper, to taste


Heat beef broth, beans, potatoes, and bay leaves to boiling in large saucepan, reduce heat and simmer, covered, until vegetables are tender, about 10 minutes.


Saute beef and onions in large skillet until lightly browned, 8 to 10 minutes, stir in vegetable mixture. Stir in tomatoes with liquid and paprika. Simmer, uncovered, 5 minutes, or until slightly thickened. Stir in sour cream, season to taste with salt and pepper.
