Curried Beef Stew with Chive Dumplings Recipe

8 servings



1 pound cubed lean beef for stew

1 tablespoon vegetable oil

1 1/2 cups chopped onions

3 tablespoons flour

1 1/2 teaspoons curry powder

2 cups reduced-sodium beef broth

1 cup chopped tomato

1 bay leaf

1 package frozen peas

Salt and pepper, to taste

Chive dumplings


Coarsely chop 1 pound beef, saute cubed and chopped beef in oil in Dutch oven until browned, about 5 minutes, add onions and cook until browned, 5 to 8 minutes. Stir in flour and curry powder and cook 1 minute. Add beef broth, tomato and bay leaf, heat to boiling. Reduce heat and simmer, covered, until beef is tender, about 1 hour, adding peas during last 10 minute. Discard bay leaf, season to taste with salt and pepper.


Heat stew to boiling, drop dumpling dough onto top of stew. Cook, uncovered, 10 minutes, cook, covered, 10 minutes longer or until dumplings are dry.
