Beef Stroganoff Recipe

Beef Stroganoff Recipe

4 servings



1 pound beef eye of round or sirloin steak, fat trimmed, cut into strips

1 tablespoon margarine or butter

3 cups sliced mushrooms

1/2 cup sliced onion

2 cloves garlic, minced

2 tablespoons flour

1 1/2 cups reduced-sodium beef broth

1 teaspoon Dijon mustard

1/4 teaspoon dried thyme leaves

1/2 cup fat-free sour cream

Salt and pepper, to taste

3 cups cooked noodles, warm


Saute beef in margarine in large saucepan until browned, about 5 minutes, remove from pan. Add mushrooms, onion, and garlic to pan, cook until tender 5 to 8 minutes. Stir in flour and cook 1 minute. Add beef, beef broth, mustard, and thyme. Heat to boiling, reduce heat and simmer, covered, until beef is tender, 45 to 60 minutes. Reduce heat to low, stir in sour cream and cook 2 to 3 minutes. Season to taste with salt and pepper and serve over noodles.
