Beef Goulash Recipe

Beef Goulash Recipe

In Hungary, this paprika seasoned stew is called "gulyas" and it's often served with dollops of sour cream.



12 ounces boneless beef round steak, fat trimmed, cubed

1 teaspoon olive oil

3 large onions, cut into thin wedges

1 cup chopped portobello mushrooms

1 can diced tomatoes, undrained

1 tablespoon paprika

1 teaspoon unsweetened cocoa

2 cups coarsely sliced cabbage

1 tablespoon caraway seeds

salt and pepper, to taste

8 ounces medium egg noodles, cooked, warm


Saute beef in oil in large saucepan until browned; add onions and mushrooms and saute 5 minutes. Add tomatoes with liquid, paprika, and cocoa and heat to boiling, reduce heat and simmer, covered, until beef is tender, 45 to 60 minutes, adding cabbage and caraway seeds during last 10 minutes. Season to taste with salt and pepper, serve over noodles.
