Easy Manhattan Clam Chowder Recipe

Easy Manhattan Clam Chowder Recipe

Enjoy this quick version of the popular clam chowder



4 sliced bacon, diced

1 cup each: chopped onion, cubed peeled potatoes

1/4 cup sliced carrots

2 tablespoons flour

1 cup clam juice

1 can reduced-sodium diced tomatoes, undrained

1/2 teaspoon dried thyme leaves

2 cans minced clams, undrained

Salt and pepper, to taste


Cook bacon and onion in lightly greased large saucepan over medium heat until bacon is crisp and onion tender, about 5 minutes. Add potatoes and carrots and cook 5 minutes; add flour and cook 1 minute. Add remaining ingredients, except salt and pepper, and heat to boiling, reduced heat and simmer, covered, until vegetables are tender, about 15 minutes. Season to taste with salt and pepper.
