Easy Italian Fish Soup Recipe

1 each: chopped large onion, rib celery

1/2 teaspoon minced garlic

1 tablespoon olive oil

1 can reduced-sodium diced tomatoes, undrained

1 bottle clam juice

1/4 cup dry white wine or clam juice

1/4 teaspoon dried marjoram leaves

1 pound halibut or other lean, firm fish, cubed

1/4 cup chopped parsley

Salt and pepper, to taste


Saute onion, celery, and garlic in oil in large saucepan over medium heat until lightly browned, about 5 minutes. Stir in tomatoes with liquid, clam juice, wine and marjoram; heat to boiling. Reduce heat and simmer, covered, 20 minutes, add halibut and simmer until fish is tender and flakes with a fork, about 5 minutes. Stir in parsley, season to taste with salt and pepper.
