Braised Fish with Sun-Dried Tomato Sauce Recipe

1 large onion, chopped

1 teaspoon minced garlic

1 tablespoon olive oil

1 cup clam juice or reduced-fat chicken broth

3 tablespoons chopped sun-dried tomatoes

3/4 teaspoon each: dried marjoram and oregano leaves

1 can reduced-sodium tomato sauce

4 halibut steaks

Salt and pepper, to taste


Saute onion and garlic in oil in large skillet until browned, about 5 minutes. Stir in clam juice, sun-dried tomatoes, and herbs. Heat to boiling, boil, uncovered, stirring frequently until liquid is almost evaporated, about 5 minutes. Add tomato sauce and fish, simmer until fish is tender and flakes with a fork, about 5 minutes. Season to taste with salt and pepper.
