Sausage and Egg Pizza Recipe

6 servings



2 large poblano chilies, sliced

1 cup chopped onion

1 clove garlic, minced

8 eggs, lightly beaten

1/4 cup fat-free milk

4 ounces Italian-style turkey sausage, cooked, crumbled

Salt and pepper, to taste

Potato Pizza Crust

1/2-1 cup shredded fat-free mozzarella cheese


Cook chilies, onion, and garlic in lightly greased large skillet over medium low heat until chilies are very soft, 20 to 30 minutes. Remove from skillet. Add combined eggs and milk to skillet, cook until eggs are just set, stirring occasionally. Stir in sausage and chili mixture, season to taste with slat and pepper. Spoon mixture onto Potato Pizza Crust and sprinkle with cheese, bake at 400 degrees until cheese is melted, about 5 minutes.
