Quiche Lorraine Recipe

Quiche Lorraine Recipe

Basic Pie Crust

1/4 cup finely chopped onion

3/4 cup each: fat-free milk

1/2 can evaporated fat-free milk

2 eggs, lightly beaten

1/4 cup fat-free sour cream

2 slices bacon, cooked crisp, crumbled

1/4 teaspoon salt

1/8 teaspoon each: cayenne pepper, ground nutmeg

1 cup shredded fat-free Swiss cheese

1 tablespoon flour


Make basic pie crust in 8-inch pie pan and bake.


Sauté onion in lightly greased small skillet until tender, 3 to 5 minutes. Mix onion and remaining ingredients, except cheese and flour, in medium bowl until smooth. Toss cheese with flour, stir into milk mixture and pour into pie crust. Bake at 350 degrees until quiche is set and a sharp knife inserted near center comes out clean, about 40 minutes. Cover edge of pie crust with aluminum foil if becoming too brown. Cool on wire rack 5 minutes.
