Goat Cheese Quesadillas Recipe

4 servings



1 package fat-free cream cheese

3 ounces reduced-fat goat cheese

1/4 cup sun-dried tomatoes, softened, chopped

4 flour tortillas

2 tablespoons chopped mint leaves


Combine cheeses and sun-dried tomatoes in small bowl, spread mixture over half of each tortilla and sprinkle with mint. Fold tortillas in half, cook in large skillet over medium heat until browned, 2 to 3 minutes on each side.
