6 servings

Six slices of English muffin bread can be substituted for English muffins



6 ounces sliced lean Canadian bacon

3 English muffins, halved, toasted

Spinach leaves

6 each: tomato slices, poached eggs

Mock Hollandaise Sauce

Paprika and chopped parsley, as garnish


Heat Canadian bacon in lightly greased small skillet until hot and lightly browned. Arrange Canadian bacon on muffin halves, top with spinach leaves, tomato slices, and poached eggs. Spoon Mock Hollandaise Sauce over eggs, sprinkle with paprika and parsley
