Easy Cheese Puff Recipe

A delicious casserole that tastes like cheese blintzes, but requires much less time and effort to prepare.



4 eggs

1 1/4 cups fat-free milk

2 tablespoons each: fat-free sour cream, melted margarine or butter

1 teaspoon vanilla

1 1/3 cups all-purpose flour

1 tablespoon each: sugar, baking powder

Sweet Cheese Filling (recipe follows)

Powdered sugar, as garnish

2 cups sliced strawberries


Sweet Cheese Filling

2 containers reduced-fat ricotta cheese

2 eggs

2 tablespoons each: sugar, lemon juice

(Mix all ingredients)


Combine all ingredients, except Sweet Cheese Filling, powdered sugar, and strawberries in large bowl, beat with mixer until very smooth. Pour 1 1/2 cups batter into lightly greased 13 x 9-inch baking dish. Bake at 350 degrees until set, about 10 minutes. Spread sweet cheese filling over baked layer. Whisk remaining batter to combine, pour over cheese, covering completely. Bake at 350 degrees until top is puffed and browned, about 45 minutes, sprinkle with powdered sugar. Cut into squares and top with strawberries.
