Country-Style Potato Kugel Recipe

6 servings



2 packages hash brown potato mix with onions

3 cups boiling water

6 egg yolks, lightly beaten

1 1/2 cups cold water

1 teaspoon each: baking powder, dried basil and oregano leaves, salt

2 tablespoons snipped chives

1/2 teaspoon pepper

6 egg whites, beaten to stiff peaks


Place potato mix in large bowl, pour boiling water over. Let stand 20 to 25 minutes, stirring occasionally. Mix combined remaining ingredients, except egg whites, into potatoes. Fold potato mixture into egg whites. Spoon mixture into lightly greased 11 x 7-inch baking dish, bake at 300 degree until browned and set, about 1 hour.
