Spicy Beef and Asparagus with Rice Noodles Recipe6 servings Using frozen stir-fry vegetables saves kitchen prep time!
Ingredients: 8 ounces rice noodles 1 pound boneless beef round steak, cut into strips 12 ounces fresh asparagus, sliced 1 package frozen stir-fry vegetables, thawed, drained 3/4 cup reduced-sodium beef broth 2 tablespoons flour 1 tablespoon each: reduced-sodium soy sauce, catsup 1 teaspoon minced garlic 1/4 teaspoon pepper 3-4 drops hot pepper sauce |
Method: Soak rice noodles in cold water to cover in bowl 10 minutes, drain. Combine noodles, beef, asparagus, and stir fry vegetables in 2 1/2 quart casserole. Whisk beef broth and remaining ingredients and pour over casserole. Bake, covered, at 350 degrees until beef is tender, about 45 minutes.
