Soft Molasses Cookies Recipe

3 dozen cookies



1/4 cup vegetable shortening

1/2 cup packed dark brown sugar

1 egg yolk

1 1/4 cups all-purpose flour

2 teaspoons baking soda

1/2 teaspoon each: ground cinnamon, ginger

1/4 teaspoon each: ground nutmeg, salt

1/4 cup light molasses

2 tablespoons water

1/2 cup currants or chopped raisins


Beat shortening, brown sugar, and egg yolk in medium bowl until blended. Mix in combined flour, baking soda, spices, and salt alternately with combined molasses and water, beginning and ending with dry ingredients. Mix in currants. Drop mixture by rounded teaspoons onto greased cookie sheets. Bake at 350 until lightly browned (cookies will be soft), 8 to 10 minutes. Cool on wire racks.
